In a nonstick frying pan over medium heat place in the olive oil and start cooking the diced onion, corn, zucchini, beans and cherry tomatoes.
After 5 minutes stir in the salt and pepper to taste, dried oregano, garlic powder, onion powder, smoked paprika, tomato sauce and sriracha.
Cook for about 10-15 minutes until the juices evaporates and everything is combined and mixed.
Add some of the filling into the tortillas and roll them like taquitos into a roll.
Arrange them on a baking trey lined with a piece of parchment paper and bake for about 10-15 minutes in an already heated 350 F or 180 C degrees oven.
Serve with a drizzle of sriracha and ketchup.
