To make the marinade in a large mixing bowl mix the soya sauce, olive oil, tomato sauce, turmeric powder, dried oregano, ground black pepper, and light brown sugar.
Slice the tofu to fit the buns and dip the tofu into the marinade mixture.
Heat a nonstick grill pan over medium heat and cook the marinated smoked tofu for about 7-9 minutes on each side. When done, set them aside.
To make the coleslaw in a bowl mix the shredded cabbage and carrot and drizzle the rest of the marinade over it.
To make the sauce in a small bowl mix the vegan mayo, sriracha and mustard until combined.
To assemble the sliders, brush the bottom of a bun with the sauce and lay one piece of lettuce.
Add the cooked tofu and top with coleslaw and sliced pickle.
Add more sauce and cover with the top bun.
Sprinkle some chopped parsley and serve with vegan sauce of your choice.
