Vegan Tofu Burgers

Ingredients

For the marinade:

  • 2 tablespoons soya sauce
  • 2 tablespoons olive oil
  • 2 tablespoons tomato sauce
  • ½ teaspoon turmeric
  • ½ teaspoon dried oregano
  • ½ teaspoon ground black pepper
  • 1 tablespoon light brown sugar

For the burgers

  • 7 oz. smoked tofu sliced in half to fit the buns
  • 1 carrot shredded
  • 1 cup shredded cabbage
  • 2 buns

For the sauce:

  • 1 tablespoon vegan mayo
  • 1 teaspoon sriracha
  • 1 teaspoon yellow mustard
  • 2 lettuce leaves
  • 1 pickle diced thinly
  • freshly chopped parsley for garnish

Instructions

  • To make the marinade in a large mixing bowl mix the soya sauce, olive oil, tomato sauce, turmeric powder, dried oregano, ground black pepper, and light brown sugar.
  • Slice the tofu to fit the buns and dip the tofu into the marinade mixture.
  • Heat a nonstick grill pan over medium heat and cook the marinated smoked tofu for about 7-9 minutes on each side. When done, set them aside.
  • To make the coleslaw in a bowl mix the shredded cabbage and carrot and drizzle the rest of the marinade over it.
  • To make the sauce in a small bowl mix the vegan mayo, sriracha and mustard until combined.
  • To assemble the sliders, brush the bottom of a bun with the sauce and lay one piece of lettuce.
  • Add the cooked tofu and top with coleslaw and sliced pickle.
  • Add more sauce and cover with the top bun.
  • Sprinkle some chopped parsley and serve with vegan sauce of your choice.
