Pasta Fresca is an easy meal to make in a short time. Great for a light lunch or dinner with your favorite salad or by itself.

- 2 tbsp Olive Oil
- 1 tbsp Minced Shallots
- 1 tsp Minced Garlic
- 1/3 cup Chopped Cherry Tomatoes
- 1 cup Chopped Spinach
- 1-2 tbsp Red Wine Vinegar
- Salt to taste
- Pepper to taste
- 200 grams Cooked Spaghetti
- 2 tbsp Grated Parmesan
- Fresh Basil for garnish
Heat olive oil in a pan.
Add shallots and garlic. Stir until aromatic.
Add tomatoes and stir briefly.
Toss in pasta and spinach.
Season as needed with red wine vinegar, salt, and pepper.
Top with freshly grated parmesan and chopped basil.
