Our pasta fresca recipe has the classic Italian ingredients you would expect for a delicious flavor. It’s a pasta bursting with flavor but very simple to make.
- Cooked Spaghetti, of course you need spaghetti as the main ingredient so choose your favorite brand of spaghetti
- Cherry Tomatoes, I love tomatoes and these little tomatoes give this dish a lot of flavor.
- Shallots are a little sweeter than onions and don’t overwhelm the pasta.

How to Make Pasta Fresca
Season the pasta fresca with red wine vinegar, salt, and pepper to taste.
Add freshly grated parmesan and chopped basil to the top of the pasta to your liking.

Pasta Fresca
Ingredients
- 2 tbsp Olive Oil
- 1 tbsp Minced Shallots
- 1 tsp Minced Garlic
- 1/3 cup Chopped Cherry Tomatoes
- 1 cup Chopped Spinach
- 1-2 tbsp Red Wine Vinegar
- Salt to taste
- Pepper to taste
- 200 grams Cooked Spaghetti
- 2 tbsp Grated Parmesan
- Fresh Basil for garnish
Instructions
- Heat olive oil in a pan.
- Add shallots and garlic. Stir until aromatic.
- Add tomatoes and stir briefly.
- Toss in pasta and spinach.
- Season as needed with red wine vinegar, salt, and pepper.
- Top with freshly grated parmesan and chopped basil.
